Cranberry + Citrus Macadamia Slice.

This three layer slice features Mt Wilderberries Wild Cranberry Juice which has a beautifully unique concentration of bioactive plant compounds.
Wild cranberries are particularly rich in type-A proanthocyanidins, which have been shown to inhibit the adhesion of certain pathogenic bacteria (such as E. coli) to the epithelial lining of the urinary tract. This anti-adhesive action is what underpins their traditional use in preventing urinary tract infections, without disrupting beneficial flora.
Cranberries also provide a gentle source of polyphenols that modulate immune pathways by reducing oxidative stress and supporting cytokine balance.

Ingredients

Base:

  • 1¼ cups almond meal

  • 2 tbsp raw honey

  • 2 tbsp ghee or melted butter

  • Zest of ½ lemon

Middle Layer:

  • ½ cup macadamia butter (smooth, room temp)

  • 3 tbsp lemon juice

  • Zest of 1 lemon

  • 3 tbsp raw honey (to taste)

  • ½ cup full-fat cream or coconut cream

  • 1½ tsp grass-fed gelatin

  • 2 tbsp water (to bloom gelatin)

  • 1 tsp vanilla extract

Cranberry Top:

Method

  1. Mix almond meal, honey, ghee and lemon zest until it sticks together when pressed. Press firmly into a lined loaf tin and freeze while preparing the next layer.

  2. Bloom gelatin in 2 tbsp water for 5 minutes. Gently warm the cream (or chosen alternative) in a small saucepan until just warm, then stir in the bloomed gelatin until fully dissolved.

  3. In a mixing bowl, whisk together macadamia butter, lemon juice and zest, honey and vanilla. Slowly pour the warm cream mixture into the macadamia mixture while whisking until smooth.

  4. Pour over the chilled base and refrigerate for 3–4 hours until fully set.

  5. Bloom gelatin for final layer in 2 tbsp water. Gently warm the cranberry juice and optional honey in a saucepan. Stir in the bloomed gelatin until completely dissolved. Once the middle layer is set, pour the berry mixture gently over the top. Refrigerate again until the gummy layer is firm.

  6. Slice and serve chilled.
