Hemp Pesto Shakshuka

This Hemp Pesto Shakshuka is a nourishing green twist on the classic.
The base of leeks and zucchini softens into a gentle sweetness, balanced by the richness of eggs and the earthy depth of hemp.

Ingredients

Hemp Pesto:

  • 2 cups fresh basil leaves, loosely packed

  • ½ cup Hemp Harvests Hemp Seeds

  • ½ cup finely grated cheddar or parmesan

  • ½ cup extra virgin olive oil

  • Pinch of Celtic sea salt

  • (Blend all ingredients until smooth and creamy; set aside)

Shakshuka Base:

  • 1–2 tbsp olive oil or butter

  • 1 medium leek, halved lengthways and finely sliced

  • 1 medium zucchini, thinly sliced into half-moons

  • ½ tsp Celtic sea salt

  • Freshly cracked black pepper

  • 4–6 eggs (depending on appetite and pan size)

  • 3–4 heaped tbsp hemp pesto

  • 1 tbsp Hemp Harvests hemp seeds, for garnish

Method

  1. Warm olive oil or butter in a pan over medium heat. Add leeks and sauté gently for 5–7 minutes until softened and fragrant.

  2. Stir through the sliced zucchini and a pinch of salt. Cook for another 5 minutes until tender and lightly golden, stirring occasionally.

  3. Lower the heat slightly and stir through the pesto, allowing it to coat the vegetables.

  4. Using the back of a spoon, make small indentations in the pesto–vegetable mixture. Crack the eggs into the wells, spacing them evenly.

  5. Cover the pan with a lid and cook gently over low heat for 5–8 minutes, or until the egg whites are set and yolks are still soft.

  6. Remove from the heat. Sprinkle with extra hemp seeds and, if you like, a drizzle of olive oil or an extra spoonful of pesto before serving.
