Satay Chicken San Choi Bow

These satay chicken san choi bow are perfect when we want something light yet satisfying that can be prepped ahead of time.
I often make the filling earlier in the day and reheat gently when we’re ready to eat, then serve it in crisp lettuce cups with a scattering of activated nuts and spring onion.

Ingredients

  • 500g chicken mince (thigh or breast)

  • 1 tbsp ghee or olive oil

  • 2 garlic cloves, finely minced

  • 1 tsp freshly grated ginger

  • 1 small red capsicum, finely diced

  • 1 carrot, grated

  • 1/3 cup Undivided Food Co Satay Sauce

  • 1 tbsp tamari

  • Butter lettuce or iceberg cups, washed and dried

  • ¼ cup activated almonds or cashews, roughly chopped

  • 3 spring onions, finely sliced (to serve)

Method

  1. Heat ghee in a large pan over medium heat. Add garlic and ginger. Cook for 1–2 minutes until fragrant.

  2. Add chicken mince and break it up with a wooden spoon. Cook for 5–6 minutes or until mostly cooked through.

  3. Stir in capsicum and carrot. Sauté for another 2–3 minutes until just softened.

  4. Add Undivided Food Co Satay Sauce, and stir to combine and warm through. Taste and adjust seasoning with tamari if needed.

  5. Spoon the mixture into crisp lettuce cups. Top with green spring onion and chopped activated nuts.
