Coconut Chia Pudding

Chia pudding is such a simple breakfast or snack idea for work, university or any busy schedule that you can easily prepare the night before.
It is filling, nutritious and rich in omega-3 fatty acids to aid cognitive function, neurotransmission, synaptic plasticity and membrane fluidity within our nervous system.

Chia seeds contain natural compounds like phytic acid and enzyme inhibitors that can hinder digestion and nutrient absorption. Soaking seeds helps break down these compounds, making them easier to digest and reducing potential bloating or discomfort. Soaking also activates enzymes in the seeds, which helps increase the bioavailability of nutrients.

Serves 1-2

Ingredients:

  • 40g (1/4 cup) chia seeds

  • 2 tbsp shredded coconut

  • 1 tbsp flaxseed meal

  • 1 cup coconut milk (or other milk of choice)

  • Desired toppings (I used fresh peaches, passion fruit and pumpkin seeds)

Method:

  • Combine the chia seeds, shredded coconut, flaxseeds and coconut milk in a bowl until well combined.

  • Place in the fridge for at least an hour, but preferably overnight to thicken.

  • Simply serve with your favourite toppings and enjoy!
